The curriculum and theses of the department are linked to the main areas of work.
In teaching, the department basically represents the entire breadth of the field of organic food quality and nutritional culture. Within the framework of a cooperation between the University of Kassel and the Fulda University of Applied Sciences, the department participates in the master courses "International Food Business and Consumer Studies" and the master's program „Sustainable International Agriculture“ with the University of Göttingen.
The courses are delivered in a seminar style with a mixture of lecture, group work and other forms of interactive learning (also IT-based) as well as individual presentation, based in praxis. Exemplary testing of concepts based on given case studies or those yet to be developed is part of the individual services. This includes the application of the QACCP-model and the sustainability analysis of regional dishes .
The e-learning services / educational offers include: lectures, assignments, case studies and discussions. Additional intensive courses to be offered (summer schools or profile modules) will start with the case studies and serve to identify talking points, to elaborate questions and to develop solution approaches.
The department supports the practical introduction of students through their integration into the Organic Food Lab.
