Summary
The project is based on a cooperation between the Studierendenwerk Kassel and the Faculty of Organic Agricultural Sciences. The Faculty aims to ensure that the food provided to students, staff and guests is in line with the Faculty's ecological orientation. The Studierendenwerk is faced with the conflicting demands of reconciling a sustainable menu offering with a reasonably priced supply for students. The aim of the "Bio Mensa" project is to sound out the opportunities and obstacles to a gradual increase in the proportion of organic food on offer at the Studierendenwerk of the University of Kassel. Specifically, the aim is to switch to 90% organic food in the Witzenhausen canteen with spill-over effects in all other canteens at the University of Kassel. The focus is on the use of organic products from regional production. The project aims to bring together stakeholders from different stages of the value chain in the region and to expand and consolidate existing approaches to cooperation, thereby increasing sales of organic food from the region.
